  • Unsalted butter: 2 tbsp
  • Diced ribs of celery: 2
  • Medium leeks, white and green parts, diced: 2
  • Dry white wine: 1/2 cup
  • Potatoes, peeled and diced about 1/4 inch, soaked in cold water: 2 russet
  • Water or bottled clam juice: 1/2 cup
  • Fresh oysters, shredded and soaked in wine: 40 oysters
  • 1 3/4 cups half-and-half, at room temperature
  • Seafood seasoning: 1/2 tp
  • Kosher salt and freshly broken black pepper
  • Chopped fresh parsley for garnish: ¼ cup
  • Oyster crackers to serve with the main course

  • Preheat the oven to medium heat but be careful to prepare it on medium heat. Add a little butter, then add the celery and leeks to a saucepan.
