What kind of oysters to use for oyster stew?

You can use either fresh or jarred oysters in this recipe, as both work well.

Jarred oysters provide more nutrients than fresh oysters, but only if the jarred oysters' liquid is used. This recipe uses all of the liquid in the jar, so nothing goes to waste and the stew gets all of the flavor.

Look for oysters in clear glass jars with a screw lid or clear plastic tubs where you can see the oysters while buying them. The oyster juice should be clear and free of debris. Avoid oysters that are in a turbid liquid.

If you're using a clear container, make sure the oysters are plump and have a bright color. If anything doesn't seem right, search for a jar with oysters that appear to be fresh and healthy.

2.2 Instructions

  • Drain the oysters in a colander over a bowl, then rinse them under cold water to remove any sand or shell fragments. Keep the brine oyster aside. Chop the oysters coarsely.
  • Place a paper towel over a mesh sieve and strain the retained oyster juice into a clean basin.
  • Heat a big saucepan over medium-high heat. Add bacon grease or butter. Add the potatoes, celery, and shallot after the fat has melted and heated.  Stirring for 2-3 minutes.
  • Reduce to medium heat and stir in the flour, old bay seasoning, and salt. Cook, stirring continually, for 1 minute, or until the flour is thoroughly browned.
  • Slowly drizzle in the saved oyster juice, swirling constantly and scraping the fond (brown pieces) off the bottom of the pan. Scrape out all of the brown particles. Then gently pour in the milk, stirring continually to ensure that everything is well combined.
  • Reduce the heat to low/simmer and let the soup cook up gently for about 10 minutes. Cook for another 2-3 minutes after adding the oysters.
  • Serve with fresh parsley, spicy sauce, and soda crackers right away.

    Tips & Notes

    • Because we live far from the beach and fresh oysters are not easily accessible, I use preserved oysters. Freshly shucked oysters, on the other hand, are a must.
    • 1 tiny potato is required. This dish works well with russet or Yukon gold potatoes.
    • For rich tastes, I recommend using whole milk. To discover two reasons why you should warm up the milk, see the post above.

    3. FAQ

Why does my oyster stew curdle?

Oyster stew curdles due to the heat. Too much heat or too much heat applied too rapidly when cooking, might cause the stew to curdle. That's why it's so important to cook an oyster stew carefully. Again, never bring your oyster stew to a boil at any point throughout the cooking process, since this can produce curdling.

Curdling can also occur when cold milk is added to a hot oyster stew. Curdling can occur due to a temperature differential between the stew and the milk. To circumvent this, simply reheat the milk for 2 minutes in the microwave before slowly pouring it into the stew, stirring constantly.

    How to serve oyster stew?

Because it takes a lot of effort to get oyster stew to the perfect temperature, it's best served immediately.

Serve your oyster stew right away, with fresh parsley, spicy sauce, and soda crackers on the side.

If you're looking for a side dish, try for something simple that will compliment the stew's great, rich flavor. Oyster stew is generally eaten with crackers, but you may alternatively serve it with roast potatoes or a side salad.

How to store for oyster stew with potatoes recipe?

With this recipe, you can refrigerate leftover oyster stew for up to 3 days and do not freeze it.
