Store the surf clams in your refrigerator until you are ready to prepare them. The ideal storage temperature for live seafood is 38° - 42°F. For optimal freshness, surf clams should be shucked and prepared the same day you receive them.

You can make sashimi or sushi Kobashira, just dip them right away with soy sauce and wasabi or stir-fried them with noodles or even on the grill.
