Instructions garlic oyster linguine

  • Step 1:

Set a small pot with the lowest fire. In the pot, put in 2 tablespoons of butter. Melt the butter slowly, once it is fully melted, add the all purpose flour. Then, gently stir the mixture to make a white butterish paste. Set the pot aside.

  • Step 2:

In another pan, saute quartered mushrooms, Cajun spice and garlic in ¼ cup of butter or oil then mix it over the medium heat for 2 or 3 minutes. Next, add shucked oysters, corn, string beans and pimento peppers to the pan. Gently mix all the ingredients until the no shells oysters are fully covered with the sauce.

Saute the mixture for 1 and a half minutes. Next, you can add the seafood stock, and linguine to the pot, let them simmer for 2 or 2.5 minutes.

  • Step 3:

Wait until you see the seafood stock is reduced a little bit. Next, gently fold in roux (the butter and flour mixture that we have made in step 1) to thicken the sauce. Then, reduce heat and put in fresh parsley and green scallions. Fold in lump crab meat and give it a gentle stir.

  • Step 4:

Serve immediately when it’s still hot. Bon appetit!

Additional Notes:

  • If you do not have any fresh parsley at home, you can use dried parsley as well.
  • You can buy packed seafood stock from supermarkets. Even though you can use it, we still highly recommend you to use fresh and homemade seafood stock so the dish can be fully flavored.
  • If you can’t find Cajun paste, you can use the Cajun spice ( the dried form) instead.
